Pleurotus ostreatus var. columbinus, commonly known as the blue oyster mushroom, is a variety of edible mushroom that belongs to the family Pleurotaceae. The Blue Oyster mushroom is a subspecies of the Pearl Oyster that exhibits a notable blue-gray hue. The color contrast between the darker caps and pale gills give them a truly stunning appearance. Its cap is white to grayish-blue with a slightly curved shape resembling an oyster shell, hence its name.
Cooking
We’ve found the Blue Oyster is identical in taste and texture to the Pearl Oyster and have yet to be able to distinguish the two in a blind taste test. They are just as versatile in a wide range of recipes. The delicate texture with a mild flavor that pairs well with many different dishes. Blue oysters are often used in egg dishes, pasta dishes or sautéed with garlic and herbs.
Benefits
While not as widely used in traditional medicine as some other mushrooms, blue oyster mushrooms have been studied for their potential health benefits which include cholesterol modulating effects, anti-inflammatory and antioxidant properties.
Cultivation
This species is native to deciduous forests throughout North America and can be found growing in clusters on dead or dying hardwood trees during late summer and fall.
